ginger pear bread

GINGER PEAR BREAD

-1 cup peeled, cored, and chopped pears
-1/2 cup white sugar
-1/2 teaspoon ground ginger 
-1/4 teaspoon ground cloves 
-1/3 cup vegetable oil 
-1 teaspoon vanilla extract 
-2 eggs, beaten 
-1 cup all-purpose flour 
-1 teaspoon baking soda 
-1/4 teaspoon baking powder 
-1/2 teaspoon salt 

DIRECTIONS
Toss chopped pears with sugar, ginger, and cloves in a large bowl. 
Set aside and let the sugar dissolve in the pear juices.
Preheat oven to 325. Grease an 8x4-inch loaf pan.
Stir vegetable oil, vanilla extract, and eggs into the pears.
In a separate bowl, combine flour, baking soda, baking powder, and salt. 
Add the flour mixture to the pear mixture and stir gently just to combine. 
Pour the batter into the prepared loaf pan.
Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, about 40 minutes.




OK so first of all... the mister and I always complain when we are looking for a recipe and have to scroll through the writer's boring life story. so in consideration of all of you who are skimming this recipe first, story about it later.

Next, I've been behind on my writing. sorry!! the plan was to write while little man napped. here's the problem....the mister went back to work the week before last and the little man decided to stop napping right around the same time. sigh... i'll get him to doze off and then as soon as i put him down he pops up and he's ready to go. i have mentally written 3 posts. i hope i remember them when i get the time to actually make them leave my head...sigh again

so i love to bake. and since little man won't nap quick breads are the best! you may or may not remember my post about baba's banana bread. i actually started making this pear ginger bread last year  when i was home on maternity leave. one of the supermarkets by me would have pears on sale for $0.98 a pound almost every other week.  and it's really easy and quick to make. i have to say it was a bit easier when little man wasn't mobile and yelling mamamamamama all the time. but the most time consuming is the cutting of the pears. 

couple of tweaks to the recipe.. number 1 most important.. this bread is AMAZING!! so i always double the recipe!! and bake in an 8x8 brownie pan. i also add way more ginger bc i like it extra gingery! and i tried making it with fresh ginger but i definitely didn't add enough fresh ginger, maybe next time.  also i have a preference for bosc and http://usapears.org/bartlett/ pears in general so i use a mix of both, but i'm sure you could use whatever pear strikes your fancy!!
