cold weather = an excuse to bake
so it got cold yesterday here in sunny southern california. cold of course being relative as compared to the east coast..
when i got home from work all the windows were open bc up until yesterday it had been perfect! so i closed all the windows and curled up on the couch under a blanket. after laying there in a semi-comatose state (as an opening shift after 3 days off can mess you up) i realized it was only 6pm and if i fell asleep then i definitely would not sleep thought the nite. i didn't really want to leave the comfy warmness of the blanket, but i had to. so i decided i had to bake something so i could turn the oven on and warm up the house!
when i had been home for baba's funeral i asked if i could have her recipes and cook books. my goal was to find her banana bread recipe. sadly i found 2 banana cakes but no banana bread...i did, however, find baba's jewish apple cake. my mom was sooo excited for this one. the two main differences between what my mom had been doing and baba's recipe were: layer the cake mix and the apples in the pan- don't combine them before hand and bake for an hour and 45 minutes. (my mom has told me this several times even though i have the original recipe in baba's handwriting)
so, since its fall and apples are nice and cheap i had bought a bunch of apple the other day with the vision of apple cake dancing in my head!
most of baba's recipes are just the ingredients and cooking time and temp. no steps. so i just mixed everything together in the order of the recipe, adding everything one at a time
BABA'S JEWISH APPLE CAKE:
4 large apples sliced and peeled tossed in bowl with 2 teaspoon sugar and 2 teaspoon cinnamon
---------
4 eggs
2 cups sugar
1 cup oil
2 1/2 teaspoon vanilla
juice of one orange
3 teaspoon baking power
3 cups flour
grease and flour tube pan
bake 350 oven 1 3/4 hours
layer apples and dough (3 layers)
that is exactly how her recipe is written
i didn't have an orange so i used 1/4 cup orange juice
also i sprinkled the top with a bit more cinnamon and sugar
and i used a silicone tube pan so my baking time was about 1 1/2 hour
the hardest part of baking this was waiting for it to cool down so we could get it out of the pan. rob and i kept going in the kitchen to see if it was cool yet.
once it cooled it was delicious..
now that it appears to be fall i see more baking in my future, and more recipes coming...
