blueberry apple muffins

so not only has it been a long time since i've written anything of substance, but its been an even longer time since i've posted a recipe.
so last week i was on vacation bc i had a friend come to visit (hi colleen)
so we were sitting around one morning kinda hungry. i had bought some blueberries be they were 10 for $10 so i kinda had to buy them...$1 for blueberries! plus blueberries are the #1 super food.
there was about a 2 month period where every time i talked to my mom she would tell me that she was on a total health kick. and you want to eat good foods..and there were super foods which were super healthy for you. and could i guess what the #1 super food was?? blueberries!!! anti-oxidants and other healthy stuff... (hi mom)
so anyway..sitting around..had blueberries.
so i googled... originally i was just looking for a blueberry pancake recipe, but it felt like too much work to make pancakes. so i switched to muffins... every time i think about making muffins i google for a new and exciting recipe, but i usually wind up with the more or less same recipe every time.
so any hoo.. blueberry-recipe.com as the name would imply blueberry recipes. and i found apple blueberry muffin which made me remember i also had a giant apple left over from making sangria... (yummm..sangria!!!)
so i made them. here's the basic recipe and them i'll give you the tweeks i made
yum! 

1 egg
1 cup buttermilk
1/4 cup salad oil
2 cup flour
1/4 cup sugar
1/8 cup packed brown sugar
1/2 tsp. soda
2 tsp. baking powder
1 tsp. salt
3/4 c. blueberries, well drained
3/4 c. apples, chopped small

Heat oven to 375 degrees. Grease 12 muffin cups. Beat egg, stir in buttermilk, oil and apple. Mix all dry ingredients until flour is moistened. Batter should be lumpy. Add the berries. Fill cups 2/3 full.

NUT - CRUNCH TOPPING:
1/3 c. chopped nuts (pecans are perfect)
1/2 tsp. cinnamon
2 tbsp. butter

Mix together and sprinkle on top of muffins. Bake 30-35 minutes. Makes 12.

ok. so i don't normally have buttermilk sitting around the house... so normally i'll use plain yogurt or something. but i had no plain yogurt either..but i did have some light sour cream. it was a bit thicker than yogurt or buttermilk so i used 3/4 cup sour cream and 1/4 cup milk. ok
then i went to get the brown sugar out of the cabinet and realized i was out....crap..so i just used all white sugar. i love to bake with brown sugar bc it has such a great taste...but i haven't been baking much lately which is my only excuse for being out...stupid..
and finally..the butter we have seems to taste like the fridge and i didn't want to taint the potential deliciousness of the muffins so i just sprinkled some sugar and cinnamon on top.
and they turned out amazing!!

so last nite i was at the supermarket and they had blueberries in the front again..they weren't $1 this time but i started thinking about the muffins..and the fact that the hubby really liked the muffins. so i bought the blueberries.  i was going to buy buttermilk for this version but they only sold it in quart containers...we are not going to use a quart of buttermilk. so i bought greek yogurt. i mixed the greek yogurt with milk again bc the dough gets kind of thick. most of the wet from dough comes from the apples when you bake them so it can be kinda difficult to mix. i found this dough to be more like cookie dough than muffin/cake dough consistency wise.
so i doubled the apples this time too...AMAZING!! as i was topping them with cinnamon prior the oven again i had the great idea to mix the apples with cinnamon next time.  this one is definitely a keeper and can be tweeked in so many delicious ways
